Mmmm....Tortilla Soup with avocado is the winner.
I made a big pot full of:
2 corn tortillas, cut into pieces
fresh lime juice
...and then I let it simmer for about 25 minutes.
Ladled into a bowl and topped with chopped avocado & fresh cilantro. There are still about 5 servings left, and I could probably eat them all today. SO satisfying.
ooh that sounds really good! i had an amazing kale and black eyed pea soup yesterday.
Ahh, two of my favorite things! I really can't get enough kale, it's a daily craving.
